PICKLE BRINE CHICKEN STRIPS

INGREDIENTS

4 chicken breasts

2 bottles Get Pickled Crafted Brines (Classic or Spicy)

1 ½ cups breadcrumbs

1 ½ cups  flour

½ teaspoon Salt

½ teaspoon Black Pepper

1 large egg

1 tablespoon cold water

Cooking Spray

1 cup sweet pickles (bread and butter pickles)

 

MARINADE

Cut the chicken breast into ½” – ¾” thick strips

Place the strips into a mixing bowl and pour the pickle juice over top. You want the pieces completely immersed. Cover the bowl and refrigerate for 6-24 hours.

 

PREPARATION

Preheat your oven to 425 degrees.

Line your baking sheet with parchment paper and spray it well with oil.

Add the flour, salt, and pepper to another bowl and mix well.

Whisk the egg with the water in a third bowl.

Coat the marinated chicken in the seasoned flour mix

Then dip the pieces in the egg mixture

Then coat with the breadcrumbs

Place the coated strips onto the baking sheet and spray again with more cooking spray

 

COOKING

Bake in the oven for 20 minutes, until they are golden and crispy (internal temperature of 165 oF)
