PICKLED SMASHED POTATO SALAD
INGREDIENTS
6 Yukon Gold potatoes
3 Hard Boiled Eggs chopped
1 Small onion, diced
1 cup mayonnaise
½ Cup Get Pickled Crafted Brines Classic
⅓ cup diced celery
1 TSP Prepared Yellow Mustard
½ TSP Salt
½ TSP Ground Black Pepper
Paprika to top
PREPARATION
Cover Potatoes in a large pot and cover with salted water
Bring pot to a boil
Lower heat to medium-low and simmer until tender (about 20 minutes)
Strain and move potatoes to a large bowl
Mash potatoes with a potato masher
Mix in onion, eggs, celery, salt and black pepper.
Mix Mayonnaise, Get Pickled Crafted Brine and Mustard in a separate bowl.
Pour over potatoes and mix well
Refrigerate for 1 hour minimum (overnight best)
Add dashes of paprika before serving
